Whether Andhra cuisine, Karnataka cuisine (Udipi), Tamil cuisine or Kerala cuisines some of the popular dishes include Hyderabadi Biryani, Saaru (Rasam like preparation), Palya, Maskai and Avare Kal.South Indian food is usually accompanied with a glass of buttermilk, the staple beverage in the South. West Indian Food is food that can be found in the states of Rajasthan, Gujarat, Goa and Maharashtra. There are a wide variety of dals, achars (pickles) and vegetable dishes that are cooked in many different manners. One of the popular dishes if the Gujarati Thaali (dish with a combination of rotis, rice, dals (kadhis), shaak/sabzis (vegetable dishes) and sweet dishes. Other popular dishes include Bombay Prawn and Pomfret, Goan fish curry, Dhokla, Pav Bhaiji, Vada Pav, Misal Pav, etc.
East India consists of the states of Sikkim, Arunachal Pradesh, Meghalaya, Mizoram, West Bengal, Assam, Manipur, Nagaland, Orissa and Tripura. As a large part of the area grows rice and receives heavy rainfall (Cherrapunji –the city with the world’s highest rainfall in the world) a large number of vegetables and fruits are abundantly found here. The cuisine of this part of India is strongly influenced by Chinese and Mongolian foods. Some of the popular dishes that can be found here include Jhaal-Muri (a spicy snack made with puffed rice and mustard oil), Machcher Jhol (fish curry) and daab chingri (coconut prawn curry).
